Dinner Menu

As I was preparing a somewhat pitiful dinner tonight - just kind of a blah Monday night - I wondered what you all were having for dinner. I made a bowl of oatmeal, toast, and grapes for Jerry while I had a grilled ham/cheese sandwich, cheese curls, and grapes. We both had a glass of milk.

So . . . how about you? Let's hear it from all you regular posters and closet readers and see who had the best dinner tonight. I'm asking for a record number of comments - so humor the old lady!!

Well . . . I got home from work about 5:15 and broiled salmon, re-heated some green peas we'd had for Dad's birthday dinner, made some stir-fry squash and threw together a salad. Now what to do tomorrow night?

Actually, you caught me on a good night. Chicken strips and hamburger steaks, mashed potatoes, green beans, and onion rings. Don't think we eat that well every night!

It's the Lynn's daughters' trifecta as we have the first three comments!!!

Anyway, I had to work late and then go to my class at Cornerstone so I had a plate of leftover pork loin, potatoes, and carrots that I heated up at my desk.

To be honest it sounds better than it was.

For dinner Kara and I had garden salads with salmon on top. Hard to believe, but our young boys will eat salmon too. We had a few chocolate covered raisins for a sweet treat.

We had roast pork loin; an avocado, cucumber, and tomato salad; and some homemade cheese straws left over from the Super Bowl party. Grace and I ate together at about 6:30. Michelle and Owen ate when they got home from a Scout meeting at 7:30. I think Owen had a banana and yogurt - he is sometimes a finicky eater.

I made goulash! Well, actually I just put together some already fried-up hamburger from the freezer (a minor miracle), cooked some macaroni noodles and opened 2 cans of spaghetti sauce. A good night for us! Oh yeah, there were also 2 leftover rolls in the freezer, but I nuked them too long and they went into the garbage. Too bad!

What nutrious eaters you all are. Lynn and I ate well last evening also--the easy way--OUT. Lest you think I never cook, we don't eat out often. However, Lynn is pretty easy to convince that messing up the kitchen is a bad idea. The many good restaurants just a hop and a skip away on the Beltline are indeed tempting.

We had chicken enchiladas and a garden salad last night, but tonight and tomorrow will be just leftovers we have to use up before we leave for Florida. So I'm done cooking for a week! Yay!

We had sloppy joe sandwiches (leftover from watching the SuperBowl the night before). Also corn, chips & dip, and grapes. Not very exciting. Sam came home late and I think he opted for a bowl of cold cereal, over the sloppy joes.

We had leftover roast beef, potatoes, green beans, lettuce salad and celery sticks with peanut butter. For dessert we had a brownie with sugar free ice cream on top. Keith loves dessert!!! How can he stay so thin?

Well, sounds like you all had some delicious meals. I'd vote #1 with Mim's idea! #2 with Alice who had my favorite meal and the best diabetic meal. #3 pork loin's always delicious. #4 everything else sounded good except - sorry guys -- but we don't eat salmon!

Last night I had my perfect meal in Oregon. (My mom knows what I like and it tastes better when she makes it.) Oregon salmon(made with a wonderful sauce), baked potato with sour cream, creamed spinach, Romaine lettuce with carrots and a wonderful raspberry vinegar dressing, homemade bread, Marionberries (unique to Oregon and the best ever.)Apple streudle and icecream for dessert with hot tea. I felt so pampered! Tonight (here in Illinois) I was quite tired and our meal was rather pitiful: Perry, 2 eggs in a sandwich, Preston, 1 hotdog in a bun, and a bowl of Campbell's vegetable soup for me. We also had carrot sticks, jello, peaches and icecream.
